Instructions
- Combine fresh rhubarb, sugar, and filtered water in a medium saucepan to start the syrup.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 to 15 minutes until the rhubarb becomes tender.
- Strain the mixture using a fine mesh sieve to remove the solids and press the rhubarb to extract as much juice as possible.
- Stir in freshly squeezed lemon juice into the strained syrup for a zesty kick.
- Fill a glass with ice cubes and pour in the rhubarb syrup to taste, topping it with chilled sparkling water.

Notes
