- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup Nutella
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the mashed bananas and melted butter until well combined.
- Add the baking soda and salt, stirring until fully incorporated.
- Mix in the sugar, beaten egg, and vanilla extract, blending until smooth.
- Fold in the flour until just combined, being careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about halfway.
- Drop a spoonful of Nutella into each muffin cup and swirl it into the batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Don’t overmix the batter to keep muffins fluffy. Consider swapping butter for applesauce for a lighter option.
