Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup Nutella

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the mashed bananas and melted butter until well combined.
  3. Add the baking soda and salt, stirring until fully incorporated.
  4. Mix in the sugar, beaten egg, and vanilla extract, blending until smooth.
  5. Fold in the flour until just combined, being careful not to overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  7. Drop a spoonful of Nutella into each muffin cup and swirl it into the batter.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

Don’t overmix the batter to keep muffins fluffy. Consider swapping butter for applesauce for a lighter option.
