Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and orange zest.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing gently until just combined.
  6. Fold in the chopped rhubarb.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
