- 1 cup grated zucchini
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1 cup cubed mozzarella cheese
- 1 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Start by grating the zucchini and then squeeze out any excess moisture.
- In a mixing bowl, combine the grated zucchini with ricotta cheese, grated Parmesan cheese, and salt. Stir until well blended.
- Form the mixture into burger patties, placing a cube of mozzarella cheese in the center of each patty.
- Roll each patty in breadcrumbs for a crispy exterior.
- Heat a skillet over medium heat, add olive oil, and carefully place the patties in the skillet. Cook for 4-5 minutes on each side until golden brown.
- Serve the burgers warm with your choice of toppings.
Notes
Squeeze out excess moisture from the zucchini for better burgers. For a lighter version, swap ricotta with cottage cheese.
