Ingredients

  • 1 cup grated zucchini
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1 cup cubed mozzarella cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Start by grating the zucchini and then squeeze out any excess moisture.
  2. In a mixing bowl, combine the grated zucchini with ricotta cheese, grated Parmesan cheese, and salt. Stir until well blended.
  3. Form the mixture into burger patties, placing a cube of mozzarella cheese in the center of each patty.
  4. Roll each patty in breadcrumbs for a crispy exterior.
  5. Heat a skillet over medium heat, add olive oil, and carefully place the patties in the skillet. Cook for 4-5 minutes on each side until golden brown.
  6. Serve the burgers warm with your choice of toppings.

Notes

Squeeze out excess moisture from the zucchini for better burgers. For a lighter version, swap ricotta with cottage cheese.
