- 2 cups Rhubarb, chopped
- 1 cup Rolled oats
- 1/2 cup Pecans, chopped
- 1/2 cup Brown sugar
- 1/4 cup Coconut oil, melted
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 1 tbsp Lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the chopped rhubarb with lemon juice in a mixing bowl.
- Mix the rolled oats, chopped pecans, brown sugar, cinnamon, melted coconut oil, and salt in another bowl until thoroughly combined.
- Sprinkle the oat mixture evenly over the rhubarb.
- Bake in the oven for 30-35 minutes, or until the topping is golden brown.
- Serve warm and enjoy!
Notes
Use fresh rhubarb for the best flavor. Consider adding strawberries for extra sweetness.
