  • 1/2 cup unsalted butter, browned

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons vanilla bean paste
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix the graham cracker crumbs with the browned butter and press firmly into the bottom of the prepared pan.
  3. In a large mixing bowl, beat the cream cheese until smooth, then gradually add sugar, mixing well.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and vanilla bean paste, followed by sour cream and flour. Mix until just combined.
  6. Pour the filling over the prepared crust and bake for 50 to 60 minutes, until the center is set but slightly jiggly.
  7. Let cool in the oven with the door slightly ajar for an hour before refrigerating.
  8. Chill for at least 4 hours or overnight before serving.
