- 1 large thin pizza crust (12 inches)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 medium tomatoes, finely chopped
- 4 large eggs
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 2.1 ounces feta cheese, crumbled
- 2 tablespoons flat-leaf parsley, chopped
- 1 tablespoon olive oil (for brushing crust)
Instructions
- Preheat your oven to 425°F (220°C) with a pizza stone or baking tray inside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the finely chopped onion along with both bell peppers and sauté for about 4 to 5 minutes.
- Add the chopped tomatoes, paprika, ground cumin, and optional red pepper flakes to the skillet and simmer for about 5 minutes.
- Reduce the heat to low, crack the eggs into the skillet, and gently stir.
- Cook for an additional 2 to 3 minutes, then season with salt and black pepper.
- Brush the crust with 1 tablespoon of olive oil and spread the menemen mixture over it.
- Sprinkle crumbled feta cheese on top.
- Transfer the pizza to the preheated stone or tray and bake for 8 to 10 minutes.
- Garnish with chopped parsley and serve warm.
Notes
Use fresh veggies for maximum flavor. Consider swapping feta for goat cheese for a tangy twist.
