  • 1 large thin pizza crust (12 inches)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 medium tomatoes, finely chopped
  • 4 large eggs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2.1 ounces feta cheese, crumbled
  • 2 tablespoons flat-leaf parsley, chopped
  • 1 tablespoon olive oil (for brushing crust)

Instructions

  1. Preheat your oven to 425°F (220°C) with a pizza stone or baking tray inside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the finely chopped onion along with both bell peppers and sauté for about 4 to 5 minutes.
  4. Add the chopped tomatoes, paprika, ground cumin, and optional red pepper flakes to the skillet and simmer for about 5 minutes.
  5. Reduce the heat to low, crack the eggs into the skillet, and gently stir.
  6. Cook for an additional 2 to 3 minutes, then season with salt and black pepper.
  7. Brush the crust with 1 tablespoon of olive oil and spread the menemen mixture over it.
  8. Sprinkle crumbled feta cheese on top.
  9. Transfer the pizza to the preheated stone or tray and bake for 8 to 10 minutes.
  10. Garnish with chopped parsley and serve warm.

Notes

Use fresh veggies for maximum flavor. Consider swapping feta for goat cheese for a tangy twist.
