Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the grated zucchini and applesauce in a large bowl, mixing well.
- Crack in the eggs and add vanilla extract; stir until incorporated.
- Whisk together almond flour, baking soda, baking powder, salt, and cinnamon in another bowl.
- Gradually add the dry mixture to the zucchini mixture and stir until fully combined.
- Fold in nuts if using, adding a crunchy texture.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely before slicing.
Notes
Do not overmix the batter for the best texture. Store leftovers in an airtight container for up to one week.
