Ingredients

  • 2 cups grated zucchini
  • 1 cup almond flour
  • 1/2 cup applesauce
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the grated zucchini and applesauce in a large bowl, mixing well.
  3. Crack in the eggs and add vanilla extract; stir until incorporated.
  4. Whisk together almond flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  5. Gradually add the dry mixture to the zucchini mixture and stir until fully combined.
  6. Fold in nuts if using, adding a crunchy texture.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter for the best texture. Store leftovers in an airtight container for up to one week.
