Ingredients

  • 1/2 cup sweet granulated erythritol
  • 1/4 cup melted unsalted butter

  • 2 large eggs
  • 1 tsp fragrant vanilla extract
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 350°F and grease a 9×9 inch baking dish.

  5. Bake the bars for 30 to 35 minutes until the edges are lightly golden and the center is set. Make sure not to overbake.
  6. Allow the cheesecake bars to cool completely at room temperature before placing them in the refrigerator for at least 2 hours to set.
  7. Once chilled, cut the cheesecake into bars and serve topped with fresh berries for a vibrant finish.
