- 1 pre-made graham cracker pie crust
- 1 pound fresh strawberries, hulled and sliced (divided)
- 1 cup heavy cream (35% fat), cold
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin (about 2½ teaspoons)
- 2 tablespoons cold water
Instructions
- In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.
- Hull and slice the strawberries. Mash half of them using a fork or masher to incorporate into the mousse.
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Drizzle the bloomed gelatin into the whipped cream mixture while gently folding it in.
- Pour the mousse into the graham cracker crust and top with reserved strawberry slices.
- Chill the pie in the refrigerator for at least 4 hours or overnight to set.
