A light and refreshing dessert with layers of fluffy mousse and fresh strawberries over a crunchy graham cracker crust.

  • 1 pre-made graham cracker pie crust
  • 1 pound fresh strawberries, hulled and sliced (divided)
  • 1 cup heavy cream (35% fat), cold
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 packet unflavored gelatin (about 2½ teaspoons)
  • 2 tablespoons cold water

Instructions

  1. In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it bloom for about 5 minutes.
  2. Hull and slice the strawberries. Mash half of them using a fork or masher to incorporate into the mousse.
  3. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  4. Drizzle the bloomed gelatin into the whipped cream mixture while gently folding it in.
  5. Pour the mousse into the graham cracker crust and top with reserved strawberry slices.
  6. Chill the pie in the refrigerator for at least 4 hours or overnight to set.
