- 1 (15.25 ounce) box strawberry cake mix
- 2 large eggs
- 3½ cups salted butter, melted
- 4 tablespoons heavy cream
- 1 cup white chocolate chips
- 1 (8 ounce) package cream cheese, room temperature
- ⅓ cup powdered sugar
- ⅓ cup sour cream
- 1 teaspoon vanilla extract
- 1 (8-ounce) tub whipped topping
- 36 vanilla sandwich cookies
- ¼ cup strawberry syrup
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish.
- In a bowl, combine the strawberry cake mix, large eggs, melted butter, and heavy cream until smooth. Fold in the white chocolate chips.
- Spread the batter evenly into the prepared baking dish and bake for 18-23 minutes, or until a toothpick comes out clean. Allow the brownies to cool completely in the dish.
- In the meantime, prepare the frosting. Beat the cream cheese and powdered sugar together until smooth. Add the sour cream and vanilla extract, then fold in the whipped topping until well combined.
- Once the brownies have cooled, spread the frosting evenly on top.
- Crush the vanilla sandwich cookies in a food processor, adding the strawberry syrup to the crushed cookies and mixing until fully combined.
- Finally, sprinkle the cookie mixture over the frosted brownies. Cut into squares, and enjoy!
Notes
Allow brownies to cool completely before frosting to prevent melting.
