- 1/2 cup unsalted butter (cold)
- 1 cup heavy cream
- 1 cup fresh strawberries (chopped)

- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C) and gather all your ingredients.
- In a large bowl, mix the flour, sugar, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs.
- Stir in the heavy cream and vanilla extract until just combined. Gently fold in the strawberries.
- Turn the dough out onto a floured surface and knead gently until combined. Shape into a circle one inch thick and cut into wedges.
- Place on a parchment-lined baking sheet and brush the tops with the egg wash.
- Bake for 15 to 20 minutes until golden brown. Allow to cool slightly before serving warm.
Notes
Use cold butter for the best texture. Store in an airtight container at room temperature for up to 2 days.
