- 1/2 cup Chia seeds
- 2 cups Unsweetened almond milk
- 8 oz Cream cheese
- 1 cup Greek yogurt
- 1/4 cup Maple syrup
- 1 tsp Vanilla extract
- 1 cup Fresh strawberries, diced
Instructions
- Combine almond milk, cream cheese, Greek yogurt, maple syrup, and vanilla extract in a mixing bowl. Whisk or blend until smooth.
- Add chia seeds to the mixture, stirring well to ensure they are evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 240 minutes or overnight.
- Remove from the fridge and stir again to break any clumps.
- Spoon the pudding into serving dishes and top with diced strawberries. Optionally, drizzle with more maple syrup.
- Serve chilled and enjoy your pudding!
Notes
Stir well after chilling to break clumps. Use coconut milk for a dairy-free version.
