Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Add the eggs one at a time, beating well after each addition, followed by the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack.
- For the icing, mix powdered sugar with lemon juice until smooth, then drizzle over the cooled loaf. Enjoy!
Notes
Allow the loaf to cool fully before icing. For a dairy-free option, use coconut oil instead of butter.
