Ingredients

  • 1/2 cup Unsalted Butter, softened
  • 2 Large Eggs
  • 1/3 cup Fresh Lemon Juice

  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Powdered Sugar (for icing)
  • 2 tablespoons Fresh Lemon Juice (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, followed by the lemon juice and lemon zest.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack.
  9. For the icing, mix powdered sugar with lemon juice until smooth, then drizzle over the cooled loaf. Enjoy!

Notes

Allow the loaf to cool fully before icing. For a dairy-free option, use coconut oil instead of butter.
