  • 3 Large eggs, beaten
  • 2 cups Cottage cheese
  • 10 ounces Frozen chopped spinach, thawed and very well drained
  • ⅓ cup Crumbled feta cheese
  • ⅓ cup Diced sweet onion
  • ¼ cup Melted butter
  • 2 tablespoons Freshly grated Parmesan cheese
  • ⅛ teaspoon Black pepper
  • ⅛ teaspoon Garlic powder
  • A dash Nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray or butter.
  2. In a mixing bowl, thoroughly combine the beaten eggs, cottage cheese, and melted butter until everything is well mixed.
  3. Gently fold in the thawed and very well drained spinach, diced onion, crumbled feta cheese, Parmesan cheese, black pepper, garlic powder, and nutmeg until evenly distributed.
  4. Pour the casserole mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for about 30-35 minutes or until the top is golden and set.
  5. Allow the casserole to cool for a few minutes before slicing. Serve warm, garnished with additional feta if desired.

Notes

Ensure spinach is very well drained for the best texture. Try using fresh spinach for enhanced flavor.
