- 3 Large eggs, beaten
- 2 cups Cottage cheese
- 10 ounces Frozen chopped spinach, thawed and very well drained
- ⅓ cup Crumbled feta cheese
- ⅓ cup Diced sweet onion
- ¼ cup Melted butter
- 2 tablespoons Freshly grated Parmesan cheese
- ⅛ teaspoon Black pepper
- ⅛ teaspoon Garlic powder
- A dash Nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray or butter.
- In a mixing bowl, thoroughly combine the beaten eggs, cottage cheese, and melted butter until everything is well mixed.
- Gently fold in the thawed and very well drained spinach, diced onion, crumbled feta cheese, Parmesan cheese, black pepper, garlic powder, and nutmeg until evenly distributed.
- Pour the casserole mixture into the prepared baking dish and spread it evenly. Bake in the preheated oven for about 30-35 minutes or until the top is golden and set.
- Allow the casserole to cool for a few minutes before slicing. Serve warm, garnished with additional feta if desired.
Notes
Ensure spinach is very well drained for the best texture. Try using fresh spinach for enhanced flavor.
