Instructions
- Begin by placing the Oreo cookies in a food processor. Pulse them until fine crumbs form for the pie crust.
- Combine the crushed Oreo cookies with melted butter in a bowl. Mix until moistened and press into a pie dish.
- In a mixing bowl, combine mint chocolate chip ice cream, whipped cream, mint extract, and a few drops of green food coloring if desired. Stir gently until smooth.
- Pour the mint filling into the prepared Oreo crust and smooth out evenly. Cover and freeze for at least 4 hours until firm.
- Before serving, garnish with chocolate shavings or mint leaves as desired. Slice, serve, and enjoy.
