Ingredients

  • 1 (9-inch) pre-made graham cracker crust
  • 1 (3 oz) package raspberry-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 1/2 cups whipped cream (or 3/4 cup heavy cream, whipped)
  • 1/2 cup fresh raspberries (plus more for garnish)

Instructions

  1. Empty the raspberry gelatin packet into a medium mixing bowl. Heat 1 cup of water until boiling.
  2. Pour the boiling water over the gelatin and whisk vigorously for about 2 minutes until completely dissolved.
  3. Stir in the cold water and place the bowl in the refrigerator. Let it chill for about 45 minutes until it thickens to a syrup-like consistency.
  4. Gently fold in the whipped cream using a rubber spatula.
  5. Pour the creamy filling into your prepared graham cracker crust, spreading it evenly. Refrigerate for at least 4 hours or overnight to set completely.

Notes

For a healthier version, use sugar-free gelatin and reduced-fat whipped cream. Serve with additional fresh raspberries and a dollop of whipped cream.
