- 1 1/2 cups All-purpose flour
- 1/2 cup Sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1/2 cup Orange juice
- 1/4 cup Vegetable oil
- 1 Large egg
- 1 teaspoon Vanilla extract
- 1 cup Cranberries (fresh or frozen)
- Zest of 1 orange
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the orange juice, vegetable oil, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the cranberries and orange zest.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and allow to cool slightly before serving.
Notes
These muffins are best enjoyed warm with flavors melding beautifully. Store in an airtight container at room temperature for up to three days.
