Ingredients

  • 1 sleeve Graham Crackers
  • 3 tablespoons Unsalted Butter (melted)
  • 12 ounces Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 1/2 cup Seedless Strawberry Preserves
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Fine Sea Salt
  • 1 Large Egg
  • 1/2 cup Semisweet Chocolate Chips
  • 1/4 cup Heavy Cream
  • 12 Fresh Strawberries (small)

Instructions

  1. Preheat your oven to 350°F. Grease a 12-cup mini cheesecake pan. Crush the graham crackers until fine and mix with the melted butter. Press the mixture into the bottom of each cup in your cheesecake pan.
  2. Bake the crusts for 5 minutes, then reduce the temperature to 325°F. In a mixing bowl, beat the cream cheese and sugar until smooth. Mix in the strawberry preserves, vanilla extract, sea salt, and egg until well combined.
  3. Divide the filling into each crust, filling them to about 3/4 full. Bake for another 18-20 minutes until set. Allow to cool completely before chilling in the refrigerator for at least 3 hours.
  4. To create the chocolate ganache, heat the heavy cream until steaming, pour it over the semisweet chocolate chips, stirring until smooth and glossy. Top chilled cheesecakes with ganache and decorate with fresh strawberries.

Notes

For a lighter, non-dairy alternative, consider using coconut cream instead of heavy cream. You can substitute honey or maple syrup for sugar, although it may change the taste and texture.
