Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
- In a mixing bowl, whisk together light all-purpose flour, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy.
- Add the large eggs one at a time, mixing well after each addition.
- Stir in the buttermilk, fresh lemon juice, lemon zest, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- For the glaze, mix powdered sugar with fresh lemon juice until smooth and drizzle over the cooled bread.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
