  • 1/4 cup poppy seeds
  • 1/2 cup softened unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
  2. In a mixing bowl, whisk together light all-purpose flour, baking powder, baking soda, salt, and poppy seeds.
  3. In another bowl, cream the softened unsalted butter and granulated sugar together until light and fluffy.
  4. Add the large eggs one at a time, mixing well after each addition.
  5. Stir in the buttermilk, fresh lemon juice, lemon zest, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. For the glaze, mix powdered sugar with fresh lemon juice until smooth and drizzle over the cooled bread.
  10. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
