- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1 cup lemon curd
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Optional: lemon zest for garnish
Instructions
- Combine the graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of serving cups to form a crust.
- Beat the cream cheese in a separate bowl until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
- Whip the heavy cream in another bowl until stiff peaks form. Gently fold it into the cream cheese mixture until well incorporated. Layer the cheesecake mousse over the crust in each cup, then add a layer of lemon curd. Repeat until cups are filled, finishing with lemon curd on top. Sprinkle with lemon zest if desired. Refrigerate for at least 2 hours before serving.
Notes
Chill before serving for the best texture. Use dairy-free cream cheese for a vegan option.
