Ingredients

  • 1 cup Rolled oats
  • 1/2 cup Almond butter or peanut butter
  • 1/2 cup Honey or maple syrup
  • 1/2 cup Protein powder
  • 1/2 cup Fresh blueberries
  • 1 Zest of lemon
  • 1 Juice of lemon
  • 1/4 cup Shredded coconut (optional)
  • 1 pinch Salt

Instructions

  1. Combine rolled oats, almond butter, honey, protein powder, lemon zest, lemon juice, and salt in a large bowl.
  2. Fold in the fresh blueberries until evenly distributed.
  3. Add shredded coconut if using, and mix until combined.
  4. Refrigerate the mixture for about 30 minutes to make it easier to handle.
  5. Scoop the mixture and form it into small bite-sized balls.
  6. Place the bites on a parchment-lined baking sheet and refrigerate again to firm up.
  7. Store in an airtight container in the fridge for up to 1 week.

Notes

Chill the mixture before shaping for easier handling. Feel free to experiment with different nut butters and fruits.
