- 1 cup Rolled oats
- 1/2 cup Almond butter or peanut butter
- 1/2 cup Honey or maple syrup
- 1/2 cup Protein powder
- 1/2 cup Fresh blueberries
- 1 Zest of lemon
- 1 Juice of lemon
- 1/4 cup Shredded coconut (optional)
- 1 pinch Salt
Instructions
- Combine rolled oats, almond butter, honey, protein powder, lemon zest, lemon juice, and salt in a large bowl.
- Fold in the fresh blueberries until evenly distributed.
- Add shredded coconut if using, and mix until combined.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Scoop the mixture and form it into small bite-sized balls.
- Place the bites on a parchment-lined baking sheet and refrigerate again to firm up.
- Store in an airtight container in the fridge for up to 1 week.
Notes
Chill the mixture before shaping for easier handling. Feel free to experiment with different nut butters and fruits.
