  • 1 cup softened unsalted butter
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 2 tbsp dried lavender
  • 1 cup fresh blueberries
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter in another bowl, then beat in the eggs one at a time, followed by the vanilla extract and milk.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the dried lavender and blueberries gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool slightly before removing from the muffin tin, and dust with powdered sugar if desired. Serve warm or at room temperature.

Notes

Use quality dried lavender for the best flavor. Store in an airtight container for up to 3 days.
