Ingredients

  • 2 cups Rolled oats
  • 1 cup Mixed nuts
  • 1/2 cup Seeds
  • 1/2 cup Unsweetened coconut flakes
  • 1/2 cup Dates (chopped)
  • 1/4 cup Coconut oil (melted)
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • Salt to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, mixed nuts, seeds, unsweetened coconut flakes, and chopped dates in a large mixing bowl.
  3. Mix the melted coconut oil, cinnamon, vanilla extract, and a pinch of salt in a separate bowl.
  4. Pour the wet mixture over the dry ingredients and stir until evenly coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20 to 25 minutes, stirring halfway through for even browning.
  7. Remove from the oven and allow to cool completely before storing in an airtight container.
