Ingredients

  • 2 ripe mashed bananas
  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the mashed bananas, cottage cheese, eggs, honey, and vanilla extract until well combined.
  3. Whisk together the whole wheat flour, baking soda, salt, and cinnamon in another bowl.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
