  • 1 cup applesauce
  • 2 medium chopped apples
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, combine the rolled oats, baking powder, salt, and cinnamon.
  3. Whisk together the applesauce, honey or maple syrup, melted coconut oil, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Fold in the chopped apples and nuts if using.
  6. Transfer the batter into the greased cake pan, spreading it evenly.
  7. Bake for about 25 to 30 minutes or until a toothpick inserted comes out clean.
  8. Once baked, let it cool in the pan for at least 10 minutes before slicing.
