Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray your muffin tin with cooking spray.
  3. In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper to taste.
  4. Stir in the chopped spinach, diced bell pepper, diced red onion, and shredded cheddar cheese.
  5. Fill each muffin cup about two-thirds full with the egg mixture.
  6. Bake for 18-22 minutes, or until the tops are set and golden.
  7. Allow muffins to cool slightly in the tin before removing.
