- 1 cup Greek yogurt

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with flour.
- In a large mixing bowl, whisk together the sugar and Greek yogurt until smooth and creamy.
- Add in the eggs, vanilla extract, and lemon zest (if using). Mix well until combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before flipping it onto a wire rack.
Notes
