  • 1 tablespoon ground cinnamon

  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup additional granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the molasses, egg, and vanilla until fully incorporated.
  5. Gradually mix the dry ingredients into the wet ingredients until the dough comes together.
  6. Roll the dough into small balls and roll each in additional granulated sugar.
  7. Place the balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are firm and the tops slightly cracked.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill dough for better shaping. For a dairy-free option, substitute coconut oil for butter.
