Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 23 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 1 cup blueberries (fresh or frozen)
  • 3/4 cup cold milk or buttermilk
  • 1 cup powdered sugar
  • 12 tbsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • Splash of water or milk (for glaze)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, sugar, and salt in a large mixing bowl.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Toss in the blueberries and pour in the cold milk, gently stirring until the dough just comes together.
  5. Turn the dough onto a lightly floured surface, pat it down to about 1-inch thick, and cut out biscuits.
  6. Place the biscuits on the prepared baking sheet and bake for 12–15 minutes until light golden on top.
  7. Whisk together the powdered sugar, lemon juice, vanilla, and a splash of water or milk until smooth for the glaze.
  8. Allow the biscuits to cool briefly before drizzling the glaze over the tops, then serve!

Notes

For the best results, use cold ingredients to achieve flakiness. Store leftovers in an airtight container for up to three days.
