- 1 cup Unsalted butter, softened
- 3/4 cup Granulated sugar
- 3/4 cup Brown sugar, packed
- 2 Large eggs
- 1 tablespoon Vanilla extract
- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 2 tablespoons Instant espresso powder
- 1 cup Chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine flour, baking soda, salt, and espresso powder. Gradually mix this dry mixture into the wet mixture.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until edges are golden and centers are set.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
For a healthier version, consider using whole wheat flour instead of all-purpose flour. These cookies pair wonderfully with milk or coffee.
