Ingredients

  • 1 cup chopped spinach
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 8 egg whites
  • Salt to taste
  • Pepper to taste
  • Olive oil or cooking spray for skillet

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a small amount of olive oil in an oven-safe skillet over medium heat.
  3. Add the diced onions and bell peppers, cooking until softened.
  4. Stir in the chopped spinach and cook until it wilts down.
  5. Whisk the egg whites in a bowl with salt and pepper.
  6. Pour the egg whites over the sautéed vegetables in the skillet.
  7. Allow it to cook on the stove for a few minutes until the edges set, then transfer it to the oven.
  8. Bake for 15-20 minutes or until the egg is fully set in the middle.
  9. Let it cool slightly, slice, and serve warm!
