- 1 cup chopped spinach
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 8 egg whites
- Salt to taste

- Olive oil or cooking spray for skillet
Instructions
- Preheat your oven to 350°F (175°C).
- Heat a small amount of olive oil in an oven-safe skillet over medium heat.
- Add the diced onions and bell peppers, cooking until softened.
- Stir in the chopped spinach and cook until it wilts down.
- Whisk the egg whites in a bowl with salt and pepper.
- Pour the egg whites over the sautéed vegetables in the skillet.
- Allow it to cook on the stove for a few minutes until the edges set, then transfer it to the oven.
- Bake for 15-20 minutes or until the egg is fully set in the middle.
- Let it cool slightly, slice, and serve warm!
