Delightful Sugar Cookie Cups that are soft, sweet, and filled with creamy frosting, perfect for any celebration.

Ingredients

  • 3/4 cup salted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Sprinkles (for decoration)
  • 2 ounces cream cheese (softened)
  • 3 cups powdered sugar
  • 1/4 cup butter
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • Pink or red food coloring gel (optional)

Instructions

  1. Preheat your oven to 350°F and grease 2 regular muffin pans with nonstick cooking spray.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the large egg, vanilla extract, and almond extract, and mix until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and baking soda.
  5. Gradually add the flour mixture to the wet mixture and mix just until combined.
  6. Press about 2 tablespoons of dough into the bottom of the greased muffin pan, pushing it up the sides halfway.
  7. Bake for 12 minutes until lightly golden. Let cool for at least 15 minutes.
  8. Press the back of a tablespoon or a spice jar into the center of each cookie to create a cup shape.
  9. For the frosting, beat cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and milk until achieving stiff peaks. Add food coloring if desired.
  10. Pipe the frosting into each cookie cup and decorate with sprinkles.

Notes

Don’t over-mix the dough. Allow cookie cups to cool before handling.
