- 3/4 cup salted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sprinkles (for decoration)
- 2 ounces cream cheese (softened)
- 3 cups powdered sugar
- 1/4 cup butter
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Pink or red food coloring gel (optional)
Instructions
- Preheat your oven to 350°F and grease 2 regular muffin pans with nonstick cooking spray.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the large egg, vanilla extract, and almond extract, and mix until smooth.
- In a separate bowl, whisk together flour, baking powder, and baking soda.
- Gradually add the flour mixture to the wet mixture and mix just until combined.
- Press about 2 tablespoons of dough into the bottom of the greased muffin pan, pushing it up the sides halfway.
- Bake for 12 minutes until lightly golden. Let cool for at least 15 minutes.
- Press the back of a tablespoon or a spice jar into the center of each cookie to create a cup shape.
- For the frosting, beat cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and milk until achieving stiff peaks. Add food coloring if desired.
- Pipe the frosting into each cookie cup and decorate with sprinkles.
Notes
Don’t over-mix the dough. Allow cookie cups to cool before handling.
