Earthquake Cake is a rich, decadent dessert that combines chocolate cake with cream cheese and sweets, ideal for special occasions or a weeknight treat.

Ingredients

  • 1 cup chopped nuts (pecans or walnuts)
  • 1 cup sweetened shredded coconut
  • 1 box chocolate cake mix
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 block (8 oz) cream cheese, softened
  • 1 cup water or milk
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Spread the chopped nuts and shredded coconut evenly on the bottom of the prepared dish.
  3. In a large mixing bowl, combine the chocolate cake mix, water or milk, and eggs. Beat until smooth and pour over the nuts and coconut.
  4. In another bowl, beat together cream cheese and butter until smooth. Gradually add powdered sugar and mix until creamy.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter, spreading it gently but do not mix.
  6. Bake for 40-45 minutes or until set and a toothpick inserted comes out clean. Allow to cool slightly before serving.
