- 1 cup unsalted butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate mint candy, chopped
- 1/2 cup chocolate chips
- 1/4 teaspoon mint extract (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the eggs, one at a time, and then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
- Fold in the chocolate mint candy and chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto ungreased baking sheets, spacing them about two inches apart.
- Bake for 8–10 minutes until edges are set but centers remain soft.
- Cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
Do not overbake. For a more robust mint flavor, replace half of the chocolate chips with peppermint chips or add crushed candy canes.
