Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a mixing bowl, combine the creamy cottage cheese, thick Greek yogurt, granulated erythritol, large eggs, fragrant vanilla extract, fresh lemon juice, baking powder, and a pinch of salt. Mix until smooth.
- Pour the mixture into the prepared springform pan and smooth the surface.
- Bake for about 50-60 minutes, or until the cheesecake is set and lightly golden on top.
