- 6 medium flour tortillas (about 8-inch, soft taco size)
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 3 tbsp butter, melted
- 1/2 cup granulated sugar
- 2 tsp ground cinnamon
Instructions
- In a mixing bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries.
- In a separate bowl, mix granulated sugar and ground cinnamon. Lay out each tortilla flat and spread about 2 heaping tablespoons of the cream cheese filling down the center.
- Roll the tortillas tightly like burritos, tucking in the edges. Brush each roll up with melted butter and roll in the cinnamon sugar mixture.
- Heat a non-stick skillet over medium heat and cook the roll ups seam-side down for about 2-3 minutes on each side until golden brown and crispy. Let them cool for a minute before slicing or serving whole.
Notes
These roll ups can be made gluten-free by using gluten-free tortillas. Feel free to experiment with different fruits or flavors.
