Ingredients

  • 6 medium flour tortillas (about 8-inch, soft taco size)
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 3 tbsp butter, melted
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon

Instructions

  1. In a mixing bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the diced strawberries.
  2. In a separate bowl, mix granulated sugar and ground cinnamon. Lay out each tortilla flat and spread about 2 heaping tablespoons of the cream cheese filling down the center.
  3. Roll the tortillas tightly like burritos, tucking in the edges. Brush each roll up with melted butter and roll in the cinnamon sugar mixture.
  4. Heat a non-stick skillet over medium heat and cook the roll ups seam-side down for about 2-3 minutes on each side until golden brown and crispy. Let them cool for a minute before slicing or serving whole.

Notes

These roll ups can be made gluten-free by using gluten-free tortillas. Feel free to experiment with different fruits or flavors.
