Ingredients

  • 1/2 cup Sugar
  • 1 packet (2 1/4 tsp) Active dry yeast
  • 1/2 cup Milk
  • 1/4 cup Butter, melted
  • 2 Eggs
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Salt
  • 1 cup Pastry cream
  • Sugar for caramelizing As needed

Instructions

  1. Combine warm milk and active dry yeast in a bowl, then let sit for 5 minutes until frothy.
  2. Mix together the all-purpose flour, sugar, and salt in a large mixing bowl.
  3. Add the yeast mixture, melted butter, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Knead the dough for about 5 minutes until smooth and elastic.
  5. Let the dough rise in a warm place until it doubles in size, about 1 hour.
  6. Roll out the dough and cut it into rounds using a donut cutter. Allow them to rise again for about 30 minutes.
  7. Heat oil in a deep fryer or heavy pot until it reaches 350°F (175°C). Fry the donuts until golden brown on each side.
  8. Cool the donuts slightly before filling them with pastry cream.
  9. Sprinkle sugar on top of each donut and caramelize with a kitchen torch for that signature crisp topping.

Notes

Make sure the oil is hot enough before frying for a perfect crispy texture. You can use almond milk as a dairy-free option.
