- 1 cup fresh shredded coconut
- 1/2 cup sugar

Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking sheet by lining it with parchment paper.
- Cream together the coconut butter and sugar until fluffy.
- Add the large eggs one at a time, mixing thoroughly after each addition.
- Stir in the vanilla extract.
- Sift together the fresh shredded coconut, baking powder, and salt in another bowl.
- Fold the dry mixture into the wet mixture until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 12 to 15 minutes or until the edges are golden brown.
- Cool on the baking sheet before transferring to a wire rack.
Notes
Use room temperature ingredients for better mixing and don’t overbake for a chewy texture.
