Ingredients

  • 1 cup coconut butter
  • 1 cup fresh shredded coconut
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking sheet by lining it with parchment paper.
  2. Cream together the coconut butter and sugar until fluffy.
  3. Add the large eggs one at a time, mixing thoroughly after each addition.
  4. Stir in the vanilla extract.
  5. Sift together the fresh shredded coconut, baking powder, and salt in another bowl.
  6. Fold the dry mixture into the wet mixture until just combined.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 12 to 15 minutes or until the edges are golden brown.
  9. Cool on the baking sheet before transferring to a wire rack.

Notes
