Instructions

  1. Combine the softened butter, brown sugar, and 3 teaspoons of cinnamon in a small bowl, beating until smooth and creamy.
  2. Mix the granulated sugar and 1 teaspoon of cinnamon in another bowl, setting aside for coating.
  3. Whisk together the eggs and milk in a shallow bowl and set aside for dipping.
  4. Trim the crusts from the bread slices, then use a rolling pin to flatten each to about 1/8 inch thick.
  5. Spread a generous layer of the cinnamon butter mixture evenly over each flattened slice.
  6. Roll up each bread slice tightly, sealing the seam with a dab of the cinnamon butter if needed.
  7. Heat a non-stick pan over medium heat and melt about 1 tablespoon of butter.
  8. Dip each roll-up into the egg mixture, ensuring all sides are coated, and let excess drip off.
  9. Place the roll-ups seam-side down in the hot pan, cooking a few at a time to avoid overcrowding. Add more butter as necessary.
  10. Cook for 2-3 minutes on each side, or until golden brown and fully cooked, turning gently.
