Instructions
- Combine the softened butter, brown sugar, and 3 teaspoons of cinnamon in a small bowl, beating until smooth and creamy.
- Mix the granulated sugar and 1 teaspoon of cinnamon in another bowl, setting aside for coating.
- Whisk together the eggs and milk in a shallow bowl and set aside for dipping.
- Trim the crusts from the bread slices, then use a rolling pin to flatten each to about 1/8 inch thick.
- Spread a generous layer of the cinnamon butter mixture evenly over each flattened slice.
- Roll up each bread slice tightly, sealing the seam with a dab of the cinnamon butter if needed.
- Heat a non-stick pan over medium heat and melt about 1 tablespoon of butter.
- Dip each roll-up into the egg mixture, ensuring all sides are coated, and let excess drip off.
- Place the roll-ups seam-side down in the hot pan, cooking a few at a time to avoid overcrowding. Add more butter as necessary.
- Cook for 2-3 minutes on each side, or until golden brown and fully cooked, turning gently.
- Remove from the pan and roll immediately in the cinnamon-sugar mixture to coat thoroughly.
- Dust with powdered sugar if desired and serve warm.
