Instructions

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine milk, egg, and melted butter; mix well.
  3. Pour wet ingredients into the dry mixture and stir gently to combine, being careful not to overmix.
  4. Fold in chocolate chips, then heat a non-stick skillet over medium heat.
  5. Pour about 1/4 cup of batter for each pancake; cook until bubbles form, then flip and cook until golden brown.
  6. For the glaze, mix brewed espresso with powdered sugar and drizzle over pancakes before serving.

Notes

For a dairy-free version, substitute almond milk; for a vegan option, use flaxseed mixture in place of egg.
