Discover how to make delightful breakfast cookies that are quick, nutritious, and temptingly sweet. Perfect for busy mornings!

  • Total Time: 25 minutes
  • Yield: 12 cookies 1x

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup mashed banana or applesauce
  • 1/2 cup chopped nuts or seeds
  • 1/2 cup chocolate chips (optional)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, almond flour, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, mix together the mashed banana, honey, and vanilla extract until well-blended. Pour this mixture into the dry ingredients and stir until fully combined.
  4. Fold in your choice of chopped nuts or seeds and chocolate chips.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes or until golden brown. Let cool before serving.

Notes

For a nut-free version, substitute almond flour with oat flour or coconut flour. Customize with spices or dried fruit for added flavor.
