Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine almond flour, erythritol, baking powder, and salt in a large bowl.
- Whisk together the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl.
- Add the wet ingredients to the dry mix and stir until combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Let it cool completely before slicing for easier serving. You can replace erythritol with a preferred keto sweetener.
