  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine almond flour, erythritol, baking powder, and salt in a large bowl.
  3. Whisk together the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl.
  4. Add the wet ingredients to the dry mix and stir until combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes
