Apple Yogurt Pancakes are a quick and easy breakfast option that combines the tartness of yogurt and sweetness of apples for a delectable start to your day.

Ingredients

  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 cup Yogurt (Greek or regular)
  • 1/2 cup Milk
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 Apple, peeled and diced
  • Maple syrup, for serving
  • Additional yogurt, for serving

Instructions

  1. Whisk together the flour, baking powder, salt, and cinnamon in a large mixing bowl.
  2. In another bowl, mix together the yogurt, milk, egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the diced apple.
  5. Heat a non-stick skillet over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm, drizzled with maple syrup and additional yogurt.

Notes

For a healthier option, consider using whole wheat or almond flour. You can also substitute the egg with a flaxseed egg for a vegan version.
