Instructions

  1. Combine the all-purpose flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  2. Whisk together the milk, egg, and melted butter in another bowl until creamy.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined, ensuring not to overmix.
  4. Fold in the diced apples gently.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  7. Serve warm with maple syrup and a sprinkle of cinnamon, if desired.

Notes

Don’t overmix the batter; lumps are okay. For a dairy-free version, use almond milk instead of regular milk.
