Ingredients

  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons shredded coconut (optional)
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini dark chocolate chips (optional)
  • Pinch of sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, chia seeds, and shredded coconut if adding. Stir well until the dry ingredients are mixed evenly.
  2. Add the almond butter, honey or maple syrup, and vanilla extract to the dry mixture. Mix until sticky and cohesive.
  3. Wet your hands to prevent sticking and roll the mixture into 1-inch diameter balls. Place on a tray lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  4. Once firm, transfer to an airtight container and store in the refrigerator for up to one week.
